At the moment I am feeling way more motivated to be healthy and to improve my diet. I don't eat terribly, but do eat a lot of chocolate - mainly because when I get a bit peckish I just want to grab something fulfilling and easy, and that is usually a chocolate bar. Especially at work when 3pm rolls around! After reading lots of the Deliciously Ella blog I realised that there are lots of healthy snacks and drinks that can satisfy a sweet craving and after trying just a few of them I am utterly convinced - medjool dates are my new love!
I will probably do a longer post as I try more recipes but today wanted to share this blueberry and banana smoothie as I had it for breakfast this morning and it was absolutely delicious - it also contains a tonne of goodness. I have adapted it only very slightly from the Deliciously Ella recipe and would recommend that you all check out her incredible blog and buy her app and cookbook - they are all fantastic.
So for this yummy healthy breakfast treat you need:
- 1 ripe banana, peeled and chopped
- 1/2 a cup of blueberries
- 1 cup of ice cold water (or even more if you want it to be more runny, it's best to blend and then add more gradually)
- 1 tbsp chia seeds
- 1 tbsp flaxseeds
- 1 tbsp oats
- 1 tbsp almond butter
- 2 medjool dates, pitted
Simply put everything in a blender and whizz for a couple of minutes!
